I am a mother of four busy children who became so enthusiastic about how eating healthy made us feel that I wrote a book, Shopper's Guide to Healthy Living. It comes complete with tear out shopping lists and easy explanations to get you and your family started!
How did you become passionate about healthy eating?
After several cancer deaths of friends and extended family and a few heatlh issues of our own, I began to research and experiment, looking for a relationship between the typical American diet and our poor health. The connection got me so fired up that it was just about all I talked about!
Would you want to come on the show to share your efforts?
I would love to and can be there tomorrow! My premise is much like Rachel's "30 Minute Meals". Americans are busy people. If we can make cooking and eating healthy easy for people to do, they are more likely to give it a try.
Do you have a favorite healthy meal to make?
My kids and their friends who hang out here love our Healthy Waffles. They are made with fresh ground spelt flour, ground flax and walnut oil,etc. We top them with my homemade syrup. Rather than making new recipes, we take the wonderful recipes from Rachel's show and find ways to make them even healthier.
What healthy staples do you always keep in your pantry or fridge?
We have things like whole grain spelt and oat groats, walnut oil, EVOO and almond milk. For over two years, we have been storing a jar of fast food french fries and a tub of soft margarine. They look like the day I bought them. If they don't break down in the pantry, how will they break down on our bodies.
What one thing can other people do to make a difference when it comes to health and nutrition?
Eat food as close to the way God made them as you can!
