How did you become passionate about healthy eating?
I became passionate about healthy eating in 2006 when I found out I was pregnant with my daughter. Suddenly nutrition wasn't about me, it was for her. I have maintained a healthy diet ever since and my daughter is learning only healthy choices as she discovers new foods as well.

Do you have a favorite healthy meal to make?
Spaghetti alla Ceci is a favorite for nutrition and speed. I make this when I have no time to make dinner. It's faster than ordering take out.
What healthy staples do you always keep in your pantry or fridge?
chickpeas, diced tomatoes, various peppers, carrots, cheese, whole grain flax bread, eggs
What one thing can other people do to make a difference when it comes to health and nutrition?
Encourage local restaurants to change their kids menus to hold smaller portions of regular meals instead of the old "grilled cheese and fries" and kraft dinner or to at least offer veggies as a side for kids instead of fries. Encourage more places to serve sweet potato fries.
